Guest guest Posted June 30, 2001 Report Share Posted June 30, 2001 * Exported from MasterCook * Eternal Ziti Salad (Greek Ziti Salad) Recipe By :The Angel Cookbook, Diane Pfeifer Serving Size : 4 Preparation Time :0:00 Categories : The Angel Cookbook Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- DRESSING: 1/3 cup balsamic or red wine vinegar 1 1/2 tablespoons Dijon mustard 2 teaspoons dried tarragon, basil, or dill 3 tablespoons olive oil salt to taste SALAD: 8 ounces ziti pasta 1 large head red leaf lettuce -- rinsed & dried 8 medium roma tomatoes -- thinly sliced 2/3 cup crumbled feta cheese 1/2 cup salty Greek black olives freshly ground pepper to taste In small bowl, combine dressing ingredients and mix well. Set aside. Cook pasta according to package directions. Drain, rinse with cold water, and drain again. Place in large mixing bowl. Toss 1/3 cup of dressing into pasta. Tear lettuce into bite-sized pieces and arrange on four dinner plates. Mound pasta on lettuce and top with tomatoes. Sprinkle with cheese and olives. Drizzle remaining dressing over salads. Season with pepper.
