I'll post the rest of the recipes I have from this cookbook. I was out of town

all day yesterday.

Arch Angel Hair Pasta (Angel Hair with Sun-Dried Tomatoes)

Amount Measure Ingredient -- Preparation Method

2 tablespoons margarine -- (lowfat okay)

1/4 cup chopped green onions

2 cloves garlic -- pressed

1/2 cup softened sun-dried tomatoes -- chopped

1 14.5 oz can diced & peeled tomatoes -- juice reserved

1 bunch fresh basil leaves -- chopped

salt & freshly ground pepper to taste

8 ounces fresh or dry angel hair pasta

grated Parmesan cheese

 

Melt margarine in a large skillet over low heat. Saute green onions, garlic,

and sun-dried tomatoes for 1 minute. Add canned tomatoes, basil, salt & pepper.

Simmer about 5 minutes. Add a small amount of reserved tomato juice to desired

consistency. Remove from heat.

 

Prepare pasta according to package directions and drain. Toss sauce with hot

pasta and serve immediately. Sprinkle each serving with Parmesan cheese and

pepper.

 

For an interesting touch, add 1 cup of chopped, marinated artichoke hearts with

the canned tomatoes.
