Soybeans in the pod are often found fresh or frozen in Asian markets. The frozen variety is usually preboiled and simply needs defrosting at room temperature or under hot running water before serving. Served as an appetizer, this " pick-up food " is eaten by placing the cut-end of the pod between the teeth, and pushing the beans out with your thumb and forefinger from the opposite end, allowing the luscious beans to fall into your mouth. Be sure to have an empty bowl placed on the table to discard the empty pods. If using fresh soybeans cook them in a pot of salted boiling water until tender, about 15 minutes. Drain and let cool to room temperature. If using frozen, preboiled soy beans, defrost. With a sharp knife cut the stem off each pod. Put in a serving bowl and garnish with a sprinkling of coarse salt. - - - - - - - - - - - - - - - - - -
