Meanwhile, process tofu in covered blender or food processor container on medium speed until smooth with next 6 ingredients. Pour into small saucepan and cook over medium heat 5 minutes, or until heated through (do not boil), stirring occasionally. Toss sauce together with fettuccine and parsley; serve immediately.
