Guest guest Posted June 29, 2001 Report Share Posted June 29, 2001 * Exported from MasterCook * Spice Nut Coffeecake Tofu Recipe By :Kikkoman Intl, San Francisco, CA Serving Size : 8 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups all-purpose flour 1/2 cup sugar 2 teaspoons baking powder 1 teaspoon ground cinnamon 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup margarine 1/2 cup chopped nuts 1 10.25-oz package Kikkoman soft tofu (290g) -- drained or Kikkoman firm tofu (297g) 1 egg CRUMB TOPPING: 1/4 cup packed brown sugar 3 tablespoons flour 1 tablespoon margarine Sift together first 6 ingredients into large bowl; cut in margarine to resemble fine crumbs. Stir in nuts. Process tofu and egg in covered blender or food processor container on medium speed until smooth; pour into flour mixture, stirring only to combine. Spread batter evenly in greased 8-inch square baking pan. Sprinkle with Crumb Topping. Bake in 350~ F. oven 30 minutes, or until pick inserted in center comes out clean. Remove to wire rack; cool slightly. Serve warm. Makes 6 to 8 servings. *Crumb Topping: Combine brown sugar and flour. Cut in margarine to resemble fine crumbs.
