Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups broken vermicelli noodles 2 cups water 1/2 cup soy milk 1/4 cup sugar or a natural sweetener 1/4 cup sliced almonds 1/4 cup golden raisins 1 teaspoon vanilla extract Sliced dried apricots and ground cinnamon -- for garnish Serves 4 to 6 Eid al-Fitr is the meal served after Ramadan, a time of fasting. Many traditional foods are served at this feast, one of which is this sweet vermicelli pudding. Try it next time you want an interesting change from rice pudding. Put the vermicelli in a saucepan with the water and bring to a boil. Reduce heat, stirring occasionally to keep the vermicelli from sticking. Cook over low heat for about 8 minutes, or until the water evaporates. Remove from heat. Add the soy milk, sugar or sweetener, almonds, raisins, and vanilla. Stir until the ingredients are well combined. Transfer to a serving dish and smooth the top.
