Mushroom Gravy

Amount Measure Ingredient -- Preparation Method

1 cup mushrooms -- sliced thin

1 tablespoon natural oil*

1 3/4 cups water

1/3 to 1/2 cup flour: whole wheat, kamut, spelt, millet,

or quinoa

2 to 3 tablespoons tamari or dark miso

1 to 2 teaspoons vegetable broth powder or 1 to 2 vegetable

bouillon cubes

several dashes sea kelp

set salt or vegetable sea salt to taste -

optional

 

Saute the mushrooms in the oil. Add the flour and stir constantly over

medium-low heat for 1 to 2 minuts to brown the flour for more flavor. Add the

remaining ingredients and stir with a wire whisk until the sauce is well mixed

and there are no lumps. Stir constantly over medium heat until very hot.

Reduce heat and cook on the lowest setting for 10 to 15 minutes until the sauce

is thiickened. Stir occasionally while simmering. Serve over hot vegetables,

burgers, balls, or whole grains.

 

*To eliminate oil from this recipe, saute the mushroom in the tamari or a bit of

water instead.
