Creamy Banana and Maple Gratinee

1/3 cup brown rice

4 cups soy milk

1 cup soy milk

3 teaspoons vanilla extract

1/2 cup creamed coconut

4 tablespoons arrowroot -- creamed to a runny paste with a little

water

6 ripe bananas -- sliced

1/2 cup wheat flakes or oats

maple syrup, to serve

 

Serves 4 to 6. Simmer together the brown rice and 4 cups soy milk for about 1

hour, until the rice is soft.

 

Bring next 4 ingredients gently to a boil, stirring with a whisk continually.

Simmer for 5 minutes and stir into the rice pudding. You may find that you need

to add a little more soy milk - it should be the consistency of thick custard.

 

Spread the bananas out in a greased ovenproof dish. Pour over the creamy

coconut topping, sprinkle with the wheat flakes or oats and drizzle with maple

syrop. Bake in a 425F oven for 10 minutes, until the top is golden.
