Guest guest Posted June 27, 2001 Report Share Posted June 27, 2001 * Exported from MasterCook * Avocado, Tomato, and Arugula Sandwiches Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Sandwiches Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 small California Avocados peeled and divided 1 tablespoon lemon juice 2 tablespoons Dijon mustard 1/8 cup mayonnaise 12 sourdough bread slices 3 packages arugula -- (3/4 ounce) 4 tomatoes -- sliced 1 teaspoon salt 1/2 teaspoon pepper Process 1 avocado and next 3 ingredients in a food processor until smooth, stopping to scrape down sides. Spread mixture evenly onto bread slices. Top half of slices with arugula and tomato; sprinkle evenly with salt and pepper. Cut remaining three avocados into slices, and arrange on tomato; top with remaining bread slices. Serve immediately.
