ShroomBean Soup

1 can fat free vegetarian refried beans (low

sodium preferred)

1/2 C to 1 C dried mushrooms -- preferably shiitake, small

pieces

1 onion diced

1 tomato diced

1 t chopped garlic

1/2 T vinegar

1/2 T vegetarian worcestershire sauce

6 C water (+ 2 to 4 C as needed)

2 t hot sauce

 

Place all ingredients in a large pot, mixing evenly. Cook on medium heat one

hour, stirring occasionally. Add water as needed to maintain desired

consistency. Can be made in a slow cooker/crockpot and left to cook all day.

 

6 servings, each 113 calories: 7% from fat (0.99 g), 73% from carbohydrates

(22.3 g), 20% from protein (6.2 g). Sodium 380 mg, Fiber 5 g.
