Sesame Buckwheat Noodles And Matchstick Vegetables

1 carrot

cut into matchsticks

12 green beans -- trimmed

and cut into matchsticks

1 turnip

cut into matchsticks

1 large garlic clove -- chopped

1/4 cup fresh lemon juice

2 cups cooked chickpeas

1/2 cup tahini -- (sesame paste)

4 tablespoons tamari sauce

1/8 teaspoon cayenne pepper

2 tablespoons minced fresh parsley

1 pound buckwheat soba noodles

 

Serves 4

 

Buckwheat soba noodles are available at natural foods stores and Asian

markets. The tahini sauce is rich in calcium and protein. Matchstick

vegetables are so-called because they are cut into fine julienne strips,

about the size of a matchstick.

 

In a covered steamer over boiling water, lightly steam the carrot, green

beans, and turnip until just tender, about 2 or 3 minutes. Set aside. In

a blender or food processor, combine the garlic, lemon juice, chickpeas,

tahini, tamari, cayenne, and 1 tablespoon of the parsley and process until

smooth. Taste and adjust the seasoning. If a saltier flavor is desired,

add more tamari and set aside.

 

Cook the noodles until tender according to the package

directions. Meanwhile, with machine running, gradually add a small amount

of warm water to the blender or food processor until the desired

consistency of the sauce is reached. When the noodles are cooked, add the

steamed vegetables to the pot and cook a minute or two to heat

through. Drain. Toss the noodles and vegetables with the warm

sauce. Garnish with the remaining parsley. Serve immediately
