Recipe By : The Sacred Kitchen, Robin and Jon Robertson, page 155

Serving Size : 4 Preparation Time :0:00

Categories : Desserts Fruits

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 pints non-dairy frozen dessert -- up to 3

OR sorbet or frozen yogurt -- (choice of flavors)

***FOR THE TOPPINGS***

Fresh berries or sliced fruit

OR cooked fruit toppings

Ground nuts

Chocolate sauce

Whipped cream or tofu whipped cream

Serves 4 to 6. See Menu: Celebration Dinner.

Invite family and friends to gather around a table laden with sundae

makings, from a variety of dessert glasses and bowls, to a selection of

sorbets, frozen yogurt, and nondairy frozen desserts. Ask everyone to

think about what would make the perfect sundae, and then to create it. Let

everyone assemble his or her own sundae, then give it to the person

opposite to eat. Thus everyone involved participates in creating and

sharing his or her own reality with another.

For this final course of the Celebration Dinner, clear the table of the

previous course and then arrange the dessert components on the table. For

convenience, you may pre-scoop the frozen dessert, sorbet, or frozen yogurt

by softening it slightly several hours before serving time and scooping it

onto a baking sheet. Let the scoops reharden in the freezer, then when

ready to serve, transfer the scoops to a serving plate or bowl. Arrange

the berries, fruit, or toppings on a platter or in bowls. Use smaller

bowls to hold the nuts, chocolate, and other toppings. Place a selection

of serving bowls and spoons on the table and explain the symbolism of the

dessert to everyone at the table. Then, dig in and enjoy Refrigerate

and/or freeze any leftovers for another use.
