Heavenly Hash (Chocolate Marshmallow Pie)

Amount Measure Ingredient -- Preparation Method

2 10.5 oz packages lowfat soft tofu

3/4 cup honey

1/2 cup cocoa powder

3 teaspoons vanilla

1 7 oz jar marshmallow cream

1/2 cup coarsely chopped pecans or walnuts -- optional

2 9-inch pie crusts -- (no lard) baked

lowfat whipped topping -- optional

 

In food processor or blender, whip tofu until smooth. In a 2-cup glass measure,

heat honey in microwave on medium-high for 90 seconds. Pour cocoa into honey,

stirring until smooth. Stir in vanilla.

 

Add chocolate mixture to tofu and blend 1 more minute. Add marshmallow cream

and blend just until swirled. Stir in nuts, if desired.

 

Pour into pie crusts and chill for 1 to 2 hours. Top with whipped topping if

desired.
