Cover, reduce heat and cook very gently for 35 minutes, or until the potato and garlic break up when prodded with a fork. Whizz until smooth in a blender or push through a mouli or straiiner. Try this sauce poured over pasta with cooked vegetables and baked for 15 minutes to brown or with stuffed vegetables or simply with steamed vegetables and brown rice.
