Creamed Garlic Sauce

1 medium potato -- finely chopped

10 garlic cloves -- peeled

2 cups soy milk

pinch dried thyme

pinch ground nutmeg

pinch ground black pepper

1 teaspoon tamari soy sauce (optional)

 

Bring everything gently to a boil. Cover, reduce heat and cook very gently for

35 minutes, or until the potato and garlic break up when prodded with a fork.

 

Whizz until smooth in a blender or push through a mouli or straiiner.

 

Try this sauce poured over pasta with cooked vegetables and baked for 15 minutes

to brown or with stuffed vegetables or simply with steamed vegetables and brown

rice.
