I adapted this from the Best of the Best - PA book. If you don't add my additional items and the butter in the ingredient list to the mix, this would be vegan. * Exported from MasterCook * Broccoli Shells Recipe By : Best of the Best - PA Serving Size : 4 Preparation Time :0:00 Categories : Pasta Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup medium pasta shells boiling salted water 1 1/2 cups frozen broccoli -- chopped 3 tbsp butter 1 tbsp oil 2 med onions -- chopped 2 cloves garlic -- minced 1/2 cup mushrooms -- sliced 1/2 cup fresh parsley -- chopped dash Tabasco Sauce or hot pepper flakes dash salt Risa's additions: 1 tsp dried oregano -- crumbled 1/2 tsp black pepper 1 tbsp cilantro -- chopped parmesan cheese mozzarella cheese -- shredded I DOUBLED THE RECIPE. ALL INGREDIENTS ARE DOUBLED (except oils)!! Cook shells in boiling salted water, until al dente, about 10 minutes (my box said 8). Add broccoli in last 5 minutes of cooking. Drain well. In a large skillet, combine butter and oil. When butter has melted, add onion, garlic and mushrooms. Saute over medium heat until onion is limp and mushrooms are lightly browned, about 5-8 minutes. Remove from heat. Add parsley, Tabasco or pepper flakes and salt (and if using cilantro, pepper, oregano). Combine with shells and broccoli, tossing to mix. Then return to skillet until heated through. Top with parmesan. Serving: Top each serving with some shredded mozzarella (low fat or fat free is ok).
