Apple-Walnut Stir-Fry Pie

12 ounces packaged fat-free fruit-sweetened oatmeal

cookies

1 tablespoon water

1/2 teaspoon fresh lemon juice

3 Granny Smith apples -- peeled

cored and thinly sliced

1/4 cup walnut pieces -- lightly toasted

2 tablespoons brown rice syrup or barley malt

1/4 teaspoon ground cinnamon

 

Serves 6

 

All the flavor of apple pie in a fraction of the time. For an even faster

dessert, try this warm spicy apple mixture over vanilla ice cream, and

garnish with a cookie.

 

Break the cookies into a blender or food processor and process into

crumbs. Press the crumbs into a lightly oiled 8-inch pie plate. Refrigerate.

 

Combine the water and lemon juice in a large skillet over medium heat. Add

the apple slices, cover, and cook for 2 minutes, or until slightly

softened. Add the walnuts, brown rice syrup or barley malt, and

cinnamon. Increase heat to medium-high and stir-fry until the apples are

slightly glazed, about 2 minutes.

 

Remove the crust from the refrigerator and spoon the apple mixture into

it. Let cool slightly, then cut into wedges and serve with vanilla ice

cream, frozen yogurt, or nondairy frozen dessert.
