Groups has *not* been sending out reminders for our cookbooks of the week,

theme days, etc., but I noticed today that they did send one out for a *new* one

I scheduled. Weird! Anyway, so if you haven't looked at the calendar, you may

not know that this week's cookbook of the week is any and all by Diane Pfeifer

including:

All of her cookbooks are vegetarian, but are not really marketed as such -- most

don't even mention that fact. Although they are rather " gimmicky " humorous

cookbooks, I've found that the recipes are pretty good, quick & easy, and most

appeal to kids. Diane is from Atlanta, GA, where I'm from and was not long ago

featured in a Southern Living magazine article.

Angel-adas (Vegetarian Enchiladas)

Amount Measure Ingredient -- Preparation Method

1 recipe Heavenly Helper (Meatless Mexican Filling) -- warm

12 flour tortillas

1 cup salsa

1 1/2 cups grated jack or cheddar cheese -- (lowfat okay)

chopped cilantro leaves for garnish

 

Fill tortillas one at a time with 2 to 3 tablespoons of Mexican filling and

sprinkle with 2 tablespoons of cheese. Roll up and place seam side down into a

large shallow baking dish. Top with salsa and cheese. Bake at 350ºF for 20

minutes. Garnish with cilantro.

Heavenly Helper (Meatless Mexican Filling)

Amount Measure Ingredient -- Preparation Method

2 tablespoons oil

1 medium yellow onion -- diced

3 cloves garlic -- minced

1/4 cup chopped green bell pepper

1 cup bulghur -- (cracked wheat)

1 cup salsa

1 cup tomato juice -- (to 2 cups)

3 tablespoons taco seasoning mix

 

In a large skillet, heat oil over medium heat. Saute onion, garlic, and green

pepper until tender. Add bulghur. Saute 1 minute, stirring well.

 

Stir in salsa, 1 cup of tomato juice, and taco seasoning. Cover and reduce

heat. Let simmer, stirring occasionally. Cook for 10 to 15 minutes until

mixture is slightly chewy, adding more tomato juice if necessary.
