Weird! Anyway, so if you haven't looked at the calendar, you may not know that this week's cookbook of the week is any and all by Diane Pfeifer including: The Angel Cookbook Stand by Your Pan Gone with the Grits Quick Bytes: Computer Lover's Cookbook For Popcorn Lovers Only All of her cookbooks are vegetarian, but are not really marketed as such -- most don't even mention that fact. Although they are rather " gimmicky " humorous cookbooks, I've found that the recipes are pretty good, quick & easy, and most appeal to kids. Diane is from Atlanta, GA, where I'm from and was not long ago featured in a Southern Living magazine article. Saute onion, garlic, and green pepper until tender. Add bulghur. Saute 1 minute, stirring well. Stir in salsa, 1 cup of tomato juice, and taco seasoning. Cover and reduce heat.
