Guest guest Posted June 23, 2001 Report Share Posted June 23, 2001 * Exported from MasterCook * Pasta Primavera Recipe By :Healthy Vegetarian, Land O Lakes #45 Serving Size : 6 Preparation Time :0:00 Categories : Illustrated Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 9 ounces uncooked fresh linguine or 8-ounces dried 3 tablespoons olive or vegetable oil 1 medium red onion -- thinly sliced 1/2 teaspoon finely chopped fresh garlic 2 medium yellow summer squash -- halved lengthwise sliced 1/8-inch (2-cups) 1 medium tomato -- 1-cup 1/2 " cubes 1 medium red or green bell pepper -- 1/4-inch strips 1 pound asparagus spears (24) -- trimmed, thirds 1/2 cup dry white wine or broth 2 tablespoons chopped fresh dill 1/4 teaspoon salt 1/4 teaspoon coarsely ground pepper Freshly grated Parmesan cheese 1. Cook linguine according to package directions. Drain. 2. Meanwhile, in 10-inch skillet heat oil; add onion and garlic. Cook over medium heat, stirring occasionally, until onion is crisply tender (3 to 4 minutes). Add squash, tomato, red pepper and asparagus. Continue cooking, stirring occasionally, until vegetables are crisply tender (8 to 10 minutes). 3. Stir in wine, dill weed, salt and pepper. Continue cooking, stirring occasionally, until heated through (4 to 5 minutes). 4. Serve over hot cooked linguine with 2 tablespoons Parmesan cheese. Serve with additional Parmesan cheese. PREPARATION TIME: 30 minutes COOKING TIME: 15 minutes MICROWAVE DIRECTIONS: Reduce 3 tablespoons oil to 1 tablespoon and 1/2 cup wine to 1/4 cup. Cook linguine according to package directions. Drain. In 2 1/2-quart casserole place oil, onion and garlic. Microwave on HIGH, stirring after half the time, until tender (2 1/2 to 3 1/2 minutes). Stir in squash, tomato, asparagus and red pepper. Cover; microwave on HIGH, stirring after half the time, until vegetables are crisply tender (5 to 7 minutes). Stir in wine, dill weed, salt and pepper. Cover; microwave on HIGH until heated through (2 to 3 minutes). Serve over hot cooked linguine with 2 tablespoons Parmesan cheese. Serve with additional Parmesan cheese.
