Guest guest Posted June 22, 2001 Report Share Posted June 22, 2001 * Exported from MasterCook * Tofu Vegetable Quiche Recipe By :Marilyn Glenville Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons tahini 3 tablespoons soy sauce 2 pounds soft tofu -- mashed 1 tablespoon arrowroot 1 pound broccoli -- cut in small bite-sized pieces 1 pre-baked savory tart shell This quiche is an unusual way to serve tofu and makes an interesting change. It is full of healthy ingredients, includind the tofu, tahini, and broccoli, which all deliver phytoestrogens. Made from sesame seeds, the tahini is also a rich source of calcium. Health food shops should sell pre-baked savory tart shells; otherwise use an ordinary pastry tart suitable for quiche, but make sure it is made with whole wheat flour. Preheat the oven to 300F. Combine the tahini, soy sauce, and tofu in a bowl. Dissolve the arrowroot in 2 oz water and combine with the tahini mixture in a saucepan. Bring to a simmer and continue to cook over moderate heat for 7 to 10 minutes. Meanwhile, in a separate pan, steam the broccolii pieces until they are just beginning to get tenderr. Add the broccoli to the tofu mixture and spoon into the pie shell. Bake in the preheated oven for 8 minutes.
