Guest guest Posted June 21, 2001 Report Share Posted June 21, 2001 * Exported from MasterCook * Posh Porridge Recipe By :Marilyn Glenville Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 ounces oatmeal 3/4 pint soy milk 3 1/2 ounces soy cream 3 tablespoons orange juice 1 teaspoon ground cinnamon 3 tablespoons maple syrup 2 ounces seedless raisins 2 ounces dried figs -- chopped 2 ounces dried apricots -- chopped additional maple syrup, or a fresh fruit puree or fruit compote, to serve Oats, which make an excellent warming breakfast, are one of the best foods for keeping cholestero; under control as well as being phytoestrogenic. This particular porridge gives you that little extra boost to your health by usinng soy milk, soy cream, and cinnamon - all sources of phtoestrogens. The dried fruit is an excellent source of antioxidants as well as potassium, which helps with water retention. If you add a fruit puree made predominantly with berries you will be giving yourself extra antioxidants by way of their bioflavonoids. Bioflavonoids strengthen the collagen in the bone matrix, so helping to prevent osteoporosis. If using coarse oatmeal, first soak it in water overnight. Put the oatmeal (well drained if necessary) in a large heavy-based pan and add the soy milk. Bring to a boil, lower the heat and then simmer for 20 to 30 minutes for coarse oatmeal, or 3 to 4 minutes (check the packet's instructions) for porridge or rolled oats. Remove the pan from the heat and allow to cool slightly. When cooler, stir in the soy cream, orange juice, cinnamon, and maple syrup and mix well. Then stir in the dried fruit. You can either serve the porridge warm or cold, topped with some more maple syrup, or a fresh fruit puree, such as raspberry or strawberry, or dried fruit compote.
