Guest guest Posted June 21, 2001 Report Share Posted June 21, 2001 Yet another one- * Exported from MasterCook * Scrambled Tofu Recipe By :Marilyn Glenville Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon fresh basil -- shredded or 1 teaspoon dried basil 2 tablespoons flat-leaf parsley -- finely chopped 1 tablespoon soy sauce 2 teaspoons olive oil 2 green onions -- chopped 8 ounces soft tofu -- crumbled A wonderful way to start the day, the tofu and parsley in the dish are packed full of phytoestrogens. Serve with whole wheat bread or toast, or with grilled tomatoes. In a bowl or using a mortar and pestle, mash together the basil, parsley, and soy sauce. Set aside. Heat the oil in a pan and, when hot, saute the green onions until just wilted. Stir in the tofu followed by the herb mixture and stir-fry for another 3 to 4 minutes.
