Guest guest Posted June 21, 2001 Report Share Posted June 21, 2001 Had this for dessert tonight and didn't feel the least bit guilty about it :-) * Exported from MasterCook Mac * Peach Tofu Ice Cream Recipe By : Tofu Cookery by Louise Hagler Serving Size : 26 Preparation Time :2:00 Categories : Desserts Fruit Healthy And Hearty Miso & Tofu Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- MARINATE IN FRIDGE FOR 1 HOUR: juice of 2 lemons 8 medium peaches -- peeled and chopped 1 cup sugar COMBINE THE PEACH MIXTURE WITH: 3 cups soy milk 1 1/2 pounds tofu 1 1/4 cups sugar 4 tablespoons vanilla 1/2 teaspoon salt Blend all ingredients in a blender in four equal batches until smooth and creamy. Pour into ice cream maker, freeze and serve. - - - - - - - - - - - - - - - - - - Per serving: 111 Calories; 2g Fat (14% calories from fat); 3g Protein; 21g Carbohydrate; 0mg Cholesterol; 46mg Sodium NOTES : 26 servings is based on a half cup serving. We used silken Lite tofu for fewer calories, although Mastercook doesn't have a category for it.
