Guest guest Posted June 20, 2001 Report Share Posted June 20, 2001 * Exported from MasterCook * Golden Sun Sauté Recipe By : The Sacred Kitchen, Robin and Jon Robertson, page 41 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon canola oil 1 small yellow onion halved lengthwise and thinly sliced 1 tablespoon grated fresh ginger 2 garlic cloves -- minced 1 yellow bell pepper -- seeded, deribbed and cut into thin strips 1/2 red bell pepper -- seeded, deribbed and cut into thin strips 2 teaspoons Madras curry powder 1 large carrot -- grated 1 yellow summer squash cut into 1/4- inch rounds 2 tablespoons or more tamari sauce 1 teaspoon packed light brown sugar -- (optional) 4 cups Brown Rice with Love (see separate recipe) 1/2 cup golden raisins 1/2 cup cashew nuts Serves 4 Radiant with the colors of the sun, this healthful sauté is a feast for the senses. Heat the oil in a large skillet or wok over medium-high heat. Add the onion, ginger, and garlic and stir-fry for 2 minutes. Add the bell peppers and stir-fry until almost tender, about 2 minutes. Add the curry powder, carrot, and squash and stir-fry for 2 minutes. Add the tamari and brown sugar (if using) and stir-fry for 30 seconds, or until well combined. Spoon a bed of rice on each dinner plate and top with a portion of the vegetable mixture.
