Guest guest Posted June 19, 2001 Report Share Posted June 19, 2001 * Exported from MasterCook * Spinach Stuffed Anchos Recipe By :Jump Up and Kiss Me, Jennifer Trainer Thompson Serving Size : 4 Preparation Time :0:00 Categories : " Sent " Jump Up And Kiss Me Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 ancho chile -- or pasillo chile, 1 clove. garlic -- minced 1 shaIIot -- finely chopped --Dash of olive oil 8 button mushrooms -- chopped 1 cup spinach leaves -- loosely packed 1 cup heavy whipping cream 1 cup Parmesan cheese -- grated -- Chopped fresh basil or mint, for garnish Rinse the chiles in running water. Slit them and remove the seeds, leaving the veins intact (they contain a lot of the flavor). Drop the chiles into boiling Water and cook for 1 minute. Remove and drain. Saute the garlic and shallot in olive oil. When they begin to change color, add the mushrooms and then the spinach. When the spinach is wilted, add the whipping cream to partially cover. Add the cheese and stir until it becomes a uniform paste. Stuff the chiles With this mixture, and garnish with fresh basil or mint. Note: A young, mild Parmesan cheese works best.
