Guest guest Posted June 19, 2001 Report Share Posted June 19, 2001 * Exported from MasterCook * Grilled Pineapple With Mango Coulis Recipe By : The Sacred Kitchen, Robin and Jon Robertson, page 22 Serving Size : 4 Preparation Time :0:00 Categories : Desserts Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup sugar OR a natural sweetener 1 cup cubed mango 1/4 cup mango juice 1 teaspoon fresh lemon juice 1 pineapple -- peeled cored and cut into 1/2-inch slices 1 cup strawberries -- hulled and sliced Serves 4 Choose the ripest fruit available for maximum flavor and natural sweetness. Rely on your sense of smell to pick a fresh pineapple - its sweet aroma will tell you if it is ripe. Ripe mangos yield slightly to the touch when gently pressed. In a blender or food processor, combine the sugar or other sweetener, mango, mango juice and lemon juice, and blend well. Transfer to a small serving bowl and set aside. Preheat the broiler and grill the pineapple slices on both sides. Arrange the pineapple slices on a pool of mango coulis and scatter the strawberry slices attractively over the fruit and coulis.
