Sesame Applesauce Bran Cookies

1/2 cup packed honey dates -- pitted

1 1/4 cups applesauce

1 teaspoon cinnamon

1 teaspoon vanilla extract

1 cup whole wheat pastry flour

1/2 cup wheat bran

1/2 cup oat bran

1/2 cup sesame seeds (unhulled)

3/4 cup raisins

 

Mix oat and wheat bran with 1/2 cup hot water in a medium bowl. Preheat oven to

350F.

 

Blend honey dates in a food proceesor with applesauce, cinnamon, and vanilla,

blend well.

 

Add the flour and bran, then pulse several seconds. Put in the sesame seeds and

raisins, then pulse chop briefly.

 

Drop by tablespoonful onto a lightly oiled baking sheet, flatten slightly using

your wet fingers. Bake for 20 minutes in a 350F oven.
