Favoring Curry

Amount Measure Ingredient -- Preparation Method

1 tablespoon canola oil

1 1/2 tablespoons curry powder or paste

1/2 teaspoon ground cumin

1/2 teaspoon ground cinnamon

1/8 teaspoon cayenne pepper

3/4 cup water

2 garlic cloves -- minced

1 small onion -- chopped

1 large carrot -- chopped

1 yellow bell pepper -- seeded

deribbed and chopped

2 cups fresh or frozen green peas

1/3 cup coconut milk

Salt -- to taste

1 tablespoon minced fresh cilantro or parsley

Brown Rice with Love

(see separate recipe)

 

Serves 4

 

The types of vegetables used may be altered to suit availability and

personal taste. Cooked chickpeas or cubed firm tofu may be added to this

dish for extra protein, if desired.

 

Heat the oil in a large skillet over medium-high heat. Add the curry

powder or paste, cumin, cinnamon, and cayenne and stir until fragrant,

about 30 seconds. Add the water, garlic, onion, car- rot, and bell

pepper. Reduce heat to low. Cover and cook, stirring occasionally, for 10

minutes, or until the vegetables have softened. Add the peas, coconut

milk, and salt and simmer, uncovered, for 5 minutes. Remove from heat and

transfer to a serving bowl. Sprinkle with cilantro or parsley and serve

over brown rice.
