Guest guest Posted June 19, 2001 Report Share Posted June 19, 2001 * Exported from MasterCook * Vegetable Lo Mein Recipe By :A Celebration of Wellness Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package lo mein noodles -- cooked according to package 1 medium bok choy -- sliced 1 can bamboo shoots 1 can waterchestnuts -- sliced 1/4 cup mirin 8 shiitake mushrooms, soaked 10 minutes -- stemmed and sliced 1 package 5-spice baked tofu -- cubed 1 recipe Chinese Brown Sauce 3 to 5 green onions -- slivered at an angle Garnish: 1/4 cup macadamia nuts (or cashews) -- toasted and chopped 1/4 cup cilantro leaves, whole lo mein sauce: 1/2 tablespoon soy sauce 3 tablespoons water 3 tablespoons rice vinegar 1 teaspoon honey In a wok saute bok choy, bamboo shoots, and chestnuts in mirin on high flame. As bok choy softens, add mushrooms and tofu. Fold noodles into wok, stirring all the while. Pour Chinese Brown Sauce on top and stir in the green onions.
