Banana Orange Zest Cake

1 1/2 cups mashed ripe bananas

1 tablespoon egg replacer

3 tablespoons water

3 tablespoons safflower or canola oil

1/2 cup honey

1 teaspoon grated orange peel

1 1/2 cups whole wheat pastry flour

1/2 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon cinnamon

2 tablespoons coconut flakes (optional)

 

Preheat oven to 350F. Mash banana with a whisk in a large bowl. Add the next 5

ingredients and whisk well.

 

Separately sift the dry ingredients, then fold them into the wet mixture just

until mixed. Do not overmix. Pour into a lightly oiled round cake pan or a

bread loaf pan. Sprinkle the coconut on top and bake 50 minutes -- or until

knife inserted comes out clean. Let cool before serving.

 

Description:

" A moist cake that doesn't need frosting. Serve for dessert with fresh

fruit or a non-dairy ice cream. Simple to prepare. "
