Kathleen * Exported from MasterCook * Spinach And Radicchio Salad With Oranges And Almonds Recipe By : Pasta East to West by Nava Atlas, page 197 Serving Size : 4 Preparation Time :0:00 Categories : Fruits Salads, Vegetable Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 ounces fresh spinach -- up to 6 preferably triple-washed rinsed and stemmed and coarsely chopped 1/2 small head radicchio -- coarsely chopped 3 small seedless oranges such as Clementines, peeled and sectioned 1 thinly sliced Kirby cucumber -- (pickling cuke) 1/4 cup toasted slivered almonds Extra-virgin olive oil White balsamic or white wine vinegar Salt and freshly ground black pepper 4 to 6 servings What a gorgeous color combination! This salad is a lively companion to any pasta or noodle dish, East or West. Combine the spinach, radicchio, oranges, cucumber, and almonds in a serving bowl, and toss together. Dress as desired with oil and vinegar, then season to taste with salt and pepper. Toss again and serve.
