Guest guest Posted June 18, 2001 Report Share Posted June 18, 2001 * Exported from MasterCook * West Indian Bean Fritters Recipe By :Jump Up and Kiss Me, pg 27 Serving Size : 4 Preparation Time :0:00 Categories : " Sent " Jump Up And Kiss Me Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 16 oz can cooked small beans 1 small yellow onion -- finely chopped 1 clove garlic -- minced 1 tablespoon habanero hot sauce or curry powder freshly ground black pepper to taste vegetable oil for frying sour cream for garnish hot sauce for garnish lime slices for garnish Combine the beans, onion, garlic, hot sauce, and black pepper in a large bowl, and stir to mix well. Pour vegetable oil 1/4-inch deep into a frying pan and heat until hot but not smoking (about 325 ° F). Drop heaping teaspoons of the fritter mixture into the hot oil, about 6 at a time. Fry on both sides until golden, 4 to 5 minutes per side (if the fritters turn dark immediately, the oil is too hot). Remove fritters with a slotted spoon and drain on paper towels.
