Swedish Brown Beans (Bruna Bonor)

1 1/2 cups Swedish brown peas or navy beans -- soaked

1 1/2 teaspoons salt

2 tablespoons blackstrap molasses

1 tablespoon brown sugar

1/4 cup apple cider vinegar

 

Simmer the peas in 6 cups of water, covered, until they're partially tender,

about an hour. Add the remaining ingredients and cook until very soft, another

30 minutes or so. When finished, the sauce should be brown and thick. If the

beans are tender but the sauce is thin, raise the heat and boil, uncovered, to

reduce the amount of liquid. If there isn't enough liquid, add a little water

to thin it out.

NOTES : This recipe comes from a couple who grow the traditional Swedish brown

beans or peas on a small organic farm in Payson, Arizona. You can occasionally

find these squarish heirloom peas at farmer's markets. With the molasses, this

dish is reminiscent of our Boston baked beans. Serve them with Molasses

Buttermilk Bread, a relative to Boston Brown Bread.
