Guest guest Posted June 15, 2001 Report Share Posted June 15, 2001 * Exported from MasterCook * Carrot Fritters Recipe By :California Home Cooking by Michele Anna Jordan Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup minced cilantro leaves 1 teaspoon grated ginger root 4 cups grated carrots 2 teaspoons cumin seed -- toasted and crushed 1 Tablespoon white mustard seeds 4 Tablespoons all-purpose flour 2 teaspoons baking powder 1 teaspoon salt 1 teaspoon pepper 4 eggs -- lightly beaten SAUCE: 1/4 cup Dijon mustard 1 pinch grated ginger root 1 pinch candied ginger root 1 pinch cilantro In a large mixing bowl toss together the cilantro and ginger with four cups freshly grated carrots. Next mix your dry ingredients: cumin, mustard seeds, flour, baking powder, salt and pepper. Add the mixture to the carrots, toss lightly, pour the beaten eggs over the mixture and toss quickly with a form to form the fritters using an ice cream scoop. Fry in two inches of peanut oil at 350 degrees for one minute on each side. Plate up, serve with a mustard sauce. Sauce: combine some mustard with the seasonings. Adjust to taste.
