Pasta Fagiole

Amount Measure Ingredient -- Preparation Method

1/2 pound whole wheat pasta* -- cooked al dente

3 cups bell peppers -- cut into small strips

2 cups mushrooms -- quartered

2 garlic cloves -- minced

1 1/2 tablespoons olive oil

4 tablespoons water

1 16 oz can white beans

1 cup fire roasted or marinated red peppers -- diced

1 teaspoon thyme

sea salt and cracked pepper to yaste

fresh basil leaves -- minced

 

Serves 2 to 4. *Try rotelli or penne. Prepare the pasta, drain and set aside in

large pot, cover.

 

Saute peppers, mushrooms, and garlic in olive oil and water for 5 to 8 minutes,

using a large skillet.

 

Stir in the beans, red peppers, and spices; then add pasta and toss well to

coat. Cover and simmer until thoroughly warmed.
