I was trying to lower the carbs a bit by omitting them - both high carb items. My DH liked these. Didn't complain, knew it was good. I garnished with some sour cream that was mixed with some leftover roasted jalapeno pesto and that really made it yummy and spicy. I guess you could mix the sour cream with some chili powder or some salsa and do something similar. * Exported from MasterCook * Two Squash Burritos Recipe By : RisaG Serving Size : 4 Preparation Time :0:00 Categories : Cheese Main Dishes, Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- water -- for boiling 1 sm zucchini -- chopped 1 sm yellow squash -- chopped 1 bell pepper (red,orange or green) -- seeded & chopped 1 sm tomato -- chopped 1/2 red onion -- minced 1 1/2 tbsp cilantro -- chopped 1/2 cup reduced fat sour cream 1 tsp ground chile molido salt and pepper -- to taste 6 oz low-fat Monterey Jack cheese -- shredded 4 10 inch flour tortillas Garnish: salsa reduced fat sour cream cilantro -- chopped Preheat oven to 375°F. Bring water to a boil in a covered pot over high heat. Add zucchini, yellow squash, and bell peppers. Return to a boil, uncovered, for 4 minutes. Drain well. Place in a large bowl. Add the tomato, onion, cilantro, reduced fat sour cream, chile molido, salt, pepper and 1/2 the cheese. Mix well. Taste for seasoning and correct. On a clean work surface, place one tortilla. With a large spoon, spoon 1/4 of the filling into the center of the tortilla. Fold up egg-roll style (left side over filling, right side over the left side, and then close and roll). Do this for all the tortillas making sure to use up all the filling. Carefully turn the burritos over, seam-side down and place on a greased baking sheet. Sprinkle the burritos with the remaining cheese. Bake for 15 minutes, making sure all the cheese melts.
