Guest guest Posted June 14, 2001 Report Share Posted June 14, 2001 wow! caloric! * Exported from MasterCook * Unico's Gnoccata al Pomodoro (Pizza) Recipe By :UNICO http://www.unico.ca/ Serving Size : 6 Preparation Time :0:00 Categories : Sandwiches Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups milk Salt 3 cups fine semolina -- (13 oz.) 3 eggs Freshly ground pepper 3/4 cup freshly grated Parmesan cheese 1/4 cup extra virgin olive oil 28 ounces canned whole plum tomatoes -- drained 10 ounces mozzarella -- thinly sliced 2 Tablespoons fine dry bread crumbs 1 Tablespoon chopped fresh oregano or 2 tsp. dried oregano Bring milk to boil with salt. Sprinkle semolina over surface, stirring all the time, and cook for 20 minutes. Let cool to lukewarm. Beat the eggs with a little salt and pepper. Add to semolina with the grated cheese and mix well. Coat a large round pizza tray with some of the oil. Turn semolina mixture into it and cover with the drained tomatoes. Arrange the mozzarella slices on top and dust with breadcrumbs and oregano. Sprinkle with remaining oil. Preheat oven to 400 degrees. Bake pizza for 20 minutes. Transfer to a napkin lined plate and serve. Garnish with parsley if desired.
