Basil Broccoli California

Amount Measure Ingredient -- Preparation Method

1 bunch broccoli

2 carrots

1 red or yellow bell pepper

2 celery ribs

3 cups water

1 fire-roasted Anaheim chile*

or

2 tablespoons canned Anaheim chiles

4 garlic cloves -- pressed

1 tablespoon dried basil (or 1/4 cup fresh leaves)

1/2 lemon -- juiced

sea salt and cayenne to taste

 

Chop the first 4 veggies, and steam for 10 minutes or until tender. Puree in

batches in a food processor using the water as neede. Transfer back to pot.

 

*Toast Anaheim chile in oven until skin blisters (3 to 5 minutes). Remove and

skin, stem, and seed. Chop flesh. Add to pot.

 

Stir in spices, garlic, and rest of water. Simmer gently.
