Guest guest Posted June 13, 2001 Report Share Posted June 13, 2001 * Exported from MasterCook * Broccoli and Roasted Sunflower Seeds Recipe By :Healthy Tomorrow 2000-06 Serving Size : 16 Preparation Time :0:00 Categories : 2Send Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large heads broccoli with peeled stems -- chopped 1/2 cup white raisins 1/4 cup sunflower seeds -- dry roasted 1/2 medium red onion -- chopped 1/3 cup soy mayonnaise -- plus 1 Tbsp soy mayonnaise (Naysoya) sweetener -- to taste 2 Tbsp fresh lemon juice or balsamic vinegar Plump raisins in hot water for 10-15 minutes, then drain. To roast sunflower seeds, place seeds in a dry skillet on low heat until lightly browned, stirring occasionally. Mix vegetables, raisins and seeds in a bowl. Mix mayonnaise, sweetener and lemon juice together and toss with salad. Makes about 7-8 cups. Serving size: 1/2 cup.
