Baked Spaghetti

Amount Measure Ingredient -- Preparation Method

1 pound spaghetti

2 quarts water

salt

6 ounces feta cheese -- crumbled

1 tablespoon olive oil

3 eggs -- slightly beaten

1 tablespoon minced parsley leaves

1/4 teaspoon cardamom

 

Break spaghetti into 2- or 3-inch lengths. Cook in two quarts of boiling salted

water for 6-8 minutes. Drain and set aside. Mix all other ingredients in a large

bowl.

 

Add spaghetti and mix thoroughly. Place in a greased baking dish and bake in a

300F oven for 20 minutes, or until top becomes golden brown. Let stand 15-20

minutes before serving.

 

Serves: 8. Calories per serving: 290; protein: 12.4 grams; carbohydrate: 40

grams; fat: 9 grams; cholesterol: 98 milligrams.
