Chunky Barbecue Tempeh

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil

1 medium onion -- coarsely chopped

3 cloves garlic -- minced

1 can unsalted tomatoes -- (14 ounce) drained and coarsely

chopped

2 tablespoons honey, molasses, or maple syrup

2 tablespoons brown rice vinegar or cider vinegar

2 tablespoons tamari

1 teaspoon paprika

1 teaspoon ground cumin

8 ounces tempeh -- steamed for 20 minutes and cut in 1-inch

strips 1/4-inch thick

 

 

 

In a medium saucepan, sauté onion and garlic in olive oil for 5 minutes. Add

remaining ingredients and simmer, partially covered, for 15 to 20 minutes, or

until sauce thickens.

Makes 4 servings.
