APPLE CAKE

1 cup silken tofu -- softened and drained

1 cup sugar

1/2 cup brown sugar

1/4 cup canola oil

1/4 cup apple juice

3 cups flour -- may use oat flour to replace white flour

1 Tablespoon baking powder

1 teaspoon cinnamon

1/2 teaspoon ginger

salt

2 cups chopped and peeled apples

 

1) Preheat oven to 350 degrees. Use a nonstick spray to prepare a 9 inch

cake pan and set aside.

2) Combine the tofu, sugar, oil and applejuice in a blender, and mix on low

speed.

3) Sift together the flour, baking powder, cinnamon, ginger and dash of salt

in a bowl.

4) Add the tofu mixture from the blender to the flour mixture, and mix well

with an electric mixer. Slowly add the apple slices and mix with a spatula.

5) Pour the batter into the pan, and bake for 50 minutes, or until a tooth

pick comes out clean when inserted. Cool on a rack.
