Guest guest Posted June 13, 2001 Report Share Posted June 13, 2001 * Exported from MasterCook * APPLE TOFU PIE Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups graham cracker crumbs 2 1/2 Tablespoons melted margarine 1 1/2 teaspoons cinnamon 1 1/2 cups drained silken tofu -- extra firm 1 cup applesauce 2 small apples -- sliced to garnish the pie (wait until ready to serve) 1/2 cup brown sugar or sugar substitute 1/4 cup sesame paste (tahini) 2 Tablespoons canola oil 1 teaspoon vanilla 1/4 teaspoon nutmeg 1/4 teaspoon salt 1) Preheat oven to 350 degrees. 2) Use a cooking spray to lightly oil a 9 inch pie plate. 3) Next, place the crumbs, margarine, and ½ teaspoon of cinnamon into the pie plate and mix evenly with a fork. Press the crumbs to form the crust in the pie plate, pressing evenly on the bottom and sides of pan. 4) Bake 10 minutes. 5) In a food processor or blender, combine the tofu, applesauce, sugar, sesame paste, oil and vanilla. Blend at high speed until smooth. 6) Add the remaining spices and salt, then blend on low speed an additional one minute. 7) Pour this mixture into the crust and bake 25-30 minutes, or until set. 8) Remove and cool at room temperature. 9) Refrigerate overnight to chill, garnish with fresh thinnly sliced apples just prior to serving.
