Guest guest Posted June 12, 2001 Report Share Posted June 12, 2001 * Exported from MasterCook * Spinach Mushroom Mousse Recipe By :A Celebration of Wellness Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 garlic clove 1 cup onions -- chopped 1/2 pound mushrooms -- cleaned and chopped 1/4 cup broth (or white wine) 1 1/4 cups spinach -- cooked or 1 10 oz package frozen spinach -- steamed 1/4 cup agar flakes 1 1/2 cups water 1/2 cup tahini 1 teaspoon sea salt 1/4 cup nutritional yeast flakes 3 tablespoons lemon juice 1/8 teaspoon cayenne pepper 1/2 teaspoon dill Saute on low heat the first three items in broth until soft. Steaam spinach until wilted. Whisk agar flakes into water in a small pan, bring to a boil on high for a couple of minutes. Put everything into a blender and puree until creamy (stop and scrape the sides of the blender). Pour into a lightly oiled mold and chill 1 to 2 hours until set. Invert on large platter decorated with lettuce or chard leaves. Makes approximately 4 cups, enough for an average mold. Serving Suggestion: Garnish with dill sprigs and lemon twists.
