Spicy Peanut Spread

Amount Measure Ingredient -- Preparation Method

1 cup roasted peanuts (unsalted)

2 tablespoons freshly chopped ginger

1 tablespoon garlic -- chopped

1/2 cup onion -- chopped

1/2 cup peeled tomatoes -- chopped

1/3 cup fresh packed cilantro leaves

1/4 cup lime or lemon juice

1 tablespoon tamari soy sauce

1 tablespoon ketchup

1 teaspoon cumin

1 teaspoon chile powder

cayenne to taste

 

Pulse chop peanuts, ginger, garlic, and onion in a food processor. Stop and

scrape down the sides.

 

Add the remaining ingredients and puree.

 

Description:

" Dynamically delicious! Use on toast or add to pasta and vegetables.

Thin with a bit of water for a sauce. "
