Tostada Grande

4 cups baked corn chips

1 medium onion -- chopped

4 cloves garlic -- finely chopped

4 cups VeggiePack

chopped in 1/2-inch pieces

(see separate recipe)

30 ounces canned fat-free vegetarian bean chili

(Add a touch of chili powder and

cayenne pepper for a spicier taste.)

4 cups EssentialSalad

cut into 1/2-inch pieces

(see separate recipe)

1/2 cup cilantro leaves

2 cups salsa

store-bought or Island Salsa

(see separate recipe)

***CILANTRO VINAIGRETTE***

1 large lemon or lime -- Juice of

2 tablespoons seasoned rice vinegar

1 tablespoon Sucanat

1/4 teaspoon sea salt

1 tablespoon chopped cilantro

 

MAKES 4 SERVINGS.

 

This dish lives up to its name; when you're ready for a filling " one-dish

meal, " this one's a front runner. It has all the right stuff, like crispy

chips, flavorful chili and veggies, and cold refreshing greens. It's

simple to throw together for one person or a big party. Thinking big is

just right for this recipe. Muy Buena!

 

Place 1 cup of chips in four oven-safe serving bowls and put in a warm oven

for a few minutes.

 

Place the chopped onion and garlic in a large nonstick pan and saute for 3

to 4 minutes. Stir in the chopped veggies and saute an additional 5

minutes. Fold in the canned bean chili until mixture is hot and blended.

 

Remove the bowls of chips from the oven and place equal amounts of the

bean/veggie mixture on top of the chips.

 

Place the EssentialSalad, mixed with the cilantro, on top and serve with

the salsa and vinaigrette dressing.
