Kathleen * Exported from MasterCook * Exotic Stir-Fry Recipe By : GardenCuisine by Paul Wenner, page 236 Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups VeggiePack (see separate recipe) 1 cup sliced red onion 5 1/2 cups mushrooms -- cut in thick slices 1 tablespoon minced garlic 2 teaspoons minced fresh ginger 1 teaspoon fresh thyme OR 1/4 teaspoon dried thyme 1 teaspoon fresh oregano OR 1/4 teaspoon dried oregano 1 tablespoon chopped fresh basil leaves OR 3/4 teaspoon dried basil 1 pound very firm tofu cut into 3/4-inch cubes 1 teaspoon olive oil -- up to 2 2 tablespoons tamari soy sauce 1 tablespoon unhulled sesame seeds, for garnish OR gomashio 2 tablespoons chopped green onions -- for garnish 2 tablespoons grated Parmesan cheese -- (optional) SERVES 6 Steam the VeggiePack until tender but crisp. Be sure to keep an eye on the vegetables so they don't get too soft. While they are steaming, sauté the onion, mushrooms, and tofu cubes in olive oil until light brown. Add the garlic, ginger, thyme, oregano, and basil. Cook 2 additional minutes, then stir in the soy sauce. To serve, place 1 cup of the steamed vegetables on a plate and top with the tofu mixture. Garnish with sesame seeds or gomashio, green onions, and, if desired, Parmesan cheese.
