Power Baked Potato

8 large potatoes

(russet or red or yellow or white etc. )

Olive oil spray

 

One of the earliest foods in history, the baked potato is also one of the

easiest fast foods on earth. Keep a big bowl of prebaked spuds in your

refrigerator and you will definitely be in the winner's circle of low-fat

eaters. Remember to top them with low-fat high-fiber toppings. The potato

is your canvas, and the toppings are your paints. Have fun creating a

culinary masterpiece.

 

Preheat the oven to 400F. Place the potatoes on baking tray and mist

lightly with olive oil spray. Pierce them with a fork a couple of times

and place in the oven. Baking time depends on the size of the

potato. Start to check them at about 35 to 40 minutes. If you can easily

push a fork into the center of the potato, it is done.

 

Now for the topping options that bring these humble potatoes to the power

level: try a steamed VeggiePack topped with Simple Marinara Sauce,

Artichoke Hearts and Fava Beans, Vegetable Stroganoff, or Hungarian Goulash.

 

If you are in the mood for a smaller side dish, simply top the baked potato
