Guest guest Posted June 10, 2001 Report Share Posted June 10, 2001 * Exported from MasterCook * Refreshing Cucumber Dip Recipe By :GARDEN CUISINE by Paul Wenner Serving Size : 0 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cucumbers 1/4 cup finely diced red onion 1 pound very fresh firm tofu 3 1/2 tablespoons lemon juice 2 cloves garlic -- peeled 1/2 teaspoon soy sauce 1/2 teaspoon salt 1/4 teaspoon coriander 1/4 teaspoon cumin pinch cayenne pepper powder 2 tablespoons minced cilantro Peel, seed, and grate the cucumbers. Place them in a mixing bowl with the red onion. In a blender, combine the tofu, lemon juice, garlic, soy sauce, salt, coriander, cumin, and cayenne. Blend until completely smooth, then pour over the cucumbers and mix well. Transfer to a serving dish and chill 2 to 3 hours.
