Not Your Average Hummus

Amount Measure Ingredient -- Preparation Method

8 carrots -- scrubbed

15 ounces canned garbanzo beans -- drained and rinsed

4 cloves garlic

1/4 cup lemon juice

2 tablespoons balsamic vinegar

1 tablespoon tamari soy sauce

1/4 teaspoon cumin

4 drops red pepper sauce

1/2 teaspoon salt

roasted red peppers for garnish

parsley for garnish

 

Cut the carrots into inch-long pieces and steam them until tender when pierced

with a fork, about 20 minutes. Place in a food processor with the garbanzo

beans, garlic, lemon juice, vinegar, tamari, cumin, red pepper sauce, and salt.

Blend until completely smooth, scraping the sides of the appliance frequently.

Spoon into a serving bowl and garnish with strips of roasted red pepper and

fresh parsley. Place the bowl on a platter and surround it with pita chips or

wedges of fresh pita bread.
