Island Salsa or Tomato Salsa

Amount Measure Ingredient -- Preparation Method

1/2 15-oz can black beans -- drained and rinsed

1/2 red bell pepper -- finely diced

1/2 green bell pepper -- finely diced

1 small red onion -- finely diced

1/2 cup chopped fresh pineapple

2 small papaya -- peeled, seeded, diced

1/4 cup chopped cilantro

1 red chili pepper -- or more to taste

1 lemon or lime -- juiced

1 tablespoon cumin

1/8 teaspoon salt -- or to taste

1/8 teaspoon black pepper -- or to taste

 

Combine all the ingredients in a large bowl. Stir just enough to mix. Be careful

not to overmix or mush the beans. Cover and refrigerate a couple of hours or

more for maximum flavor.

 

VARIATION Tomato salsa: replace papayas with ripe tomatoes and leave out the

pineapple. Add 6 to 8 cloves of roasted garlic.
